The Stella fig is a large, cold-hardy, self-fertile fig tree known for producing striking green to bronze-skinned fruit with a deep purplish-red or amber interior. It features a very sweet, jam-like texture and a bold, complex berry or strawberry-like flavor.

 

Stella figs (also known as Dalmatie or Vasilika Sika) are highly regarded by home gardeners and orchardists for several specific reasons:

 

  • Flavor Profile: They offer a rich, intensely sweet taste with a smooth, jam-like pulp . The fruit develops a distinct and complex berry profile, leaning towards a strawberry or raspberry-like taste when fully ripe.

 

  • Climate and Hardiness: Stella figs perform exceptionally well in cooler climates (hardy down to 0° to 5°F) , allowing them to reliably ripen in areas with shorter summers and on the West Coast.

 

  • Size: This variety produces very large figs, with fruit frequently weighing over 150 grams  and brebas (the early crop) sometimes reaching 200 grams .

 

  • Growth Habit: The trees are fast, vigorous growers that reach maturity around 8 to 10 feet. They are highly adaptable and do wonderfully when grown directly in the ground or kept in patio containers.

 

  • Harvest: They yield two crops (breba and main) and typically ripen from mid-summer through early autumn, depending on the growing zone.
