The Salem White fig (also known as "Salem Honey") is a medium-sized, self-fertile honey fig variety. It features a bright yellow-to-green exterior and a sweet, light red or amber interior. Known for its complex profile, it delivers a smooth honey-berry sweetness with a soft, floral depth.

 

Key Characteristics

  • Flavor Profile: Offers more complexity than average honey figs, with sweet, nectar-like notes and a slightly chewy skin that provides excellent texture.

 

  • Uses: Highly sought after for eating fresh directly off the branch, but also highly prized for making homemade preserves like honey fig jelly.

 

  • Growth & Hardiness: Brought to the United States from Lebanon (and originally tracing back to Sicily). The tree is highly productive, vigorous, and noted for being cold-hardy once established.

 

  • Fig Type: Common type, meaning it does not require the specialized Blastophaga psenes wasp to pollinate, making it easy to grow in many climates .
